Less oily and much more appetizing, seasonal fruits and seafood are the best choice in the heat of summer. Have a look at our chefs' pick on some unique dishes - you might find the hot season is the perfect time to enjoy gourmet food.

Litchi is a local fruit so flavorful that Emperors in ages past kept swift-riding couriers on-call to fetch them all the way from China's southern shores. In Lai Heen sixteen seasonal creations, including litchi wood roasted chicken; litchi salads and soups; a selection of litchi dim sum; litchi desserts and a special litchi tea, served from a fragrant trolley circulating the dining room - cool your palate and your body.

Master Chef John and his culinary entourage will feature a whole month festival exploring different ways of cooking using the locally produced vegetable flowers paired with fresh fruits. Flower petals such as lily, jasmine, rose, lotus, peony, overlord flower, evening primrose and orchid are wisely designed in the cold dishes, soups, hot dishes and desserts.

Shatian pomelo (沙田柚) is a specialty in the Guangdong Meixian county. Locals cook the skin of the fruit with juicy meat and chicken for hours. The dish "Shatian pomelo skin with abalone juice and foie gois" is cooked over ten hours by the chef of the Baiyue Restaurant. Another vegetable balsam pear is usually cooked in summer to get rid of the unhealthy moisture in the body. Alaska crab is added in the balsam pear thick soup to enrich its freshness and balance its bitterness.
