Shangri-La Hotel, Guangzhou Welcomes Antonio Tardi as Executive Sous Chef

Shangri-La Hotel, Guangzhou recently welcomed Antonio Tardi to its culinary team as executive sous chef. In his new role, Chef Antonio focuses on enhancing the Western dining experience of the hotel, as well as introducing authentic Italian flavours to local diners through traditional dishes with a personal innovative twist. Prior to this appointment, he was the head chef of Shangri-La's Far Eastern Plaza Hotel, Taipei.

Chef Antonio has 23 years of culinary experience gained in many countries, including Italy, France and Jamaica. In 2006, he was invited to the World Gourmet Summit in Las Vegas as an honorary inductee and master chef, teamed with the American celebrity chef Walter Staib.

Culinary Journey
Chef Antonio entered the world of gastronomy at the age of 16, and graduated with dual degrees in 1996 from the Luigi de Medici Institute, situated in Naples, Italy. Two years later, he travelled north to Veneto and completed a professional pastry course at the world famous Etoile Institute. In addition, Chef Antonio is certified as a hospitality department trainer by the American Hotel and Lodging Educational Institute and received an associate degree in food service management from Cornell University.

In the early days of Chef Antonio's career, he had the privilege of developing his culinary skills under various renowned chefs, including Chef Gualtiero Marchesi – known as the founder of modern Italian cuisine, Chef Davide Oldani of the Michelin one-star Ristorante Giannino in Milan, and Chef Jean-Louis Nomicos of the Michelin one-star La Grande Cascade in Paris. He also fine-tuned his pastry skills under the guidance of World Pastry Champion Luigi Biasetto in Padova, Italy.

With a desire to seek new adventures and explore new flavours, Chef Antonio went to the Caribbean in 2005. As well as guiding the restaurant and kitchen teams to provide consistently high-quality service and exquisite food, he assisted with the opening of a new village at Sandals Antigua. Chef Antonio then worked as a senior executive sous chef at a six-star resort hotel in the Turks and Caicos Islands. His experience in the Caribbean inspired him to continue his culinary journey in Asia, which brought him to Taipei and Guangzhou.

Culinary Style
"In the current networked world, recipes are easy to find on the Internet," said Chef Antonio. "Being a professional chef, personal cooking style and innovative ideas are essential to an exquisite dish.” Chef Antonio believes that creativity is in the nature of classic dishes. Regarding the ingredients, Chef Antonio believes there is no delicious dish without quality ingredients. "I am always searching for locally produced products and seasonal ingredients to ensure quality and freshness are well blended in my cooking style."

Many years of working in well-known restaurants and resorts have given Chef Antonio numerous opportunities to serve well-known icons and celebrities, including pop star Mariah Carey, model Naomi Campbell and Mercedes' Formula 1 race driver Michael Schumacher.
